When we visited, we happened to witness the final stage of baking nazuki. To give the nazuki a glossy finish, a mixture of egg, cloves, sugar, and salt was brushed onto the surface during the final baking stage. It appears the ingredient proportions are measured by eye. The baked nazuki are kept warm wrapped in blankets. According to her, since a new highway section opened in summer 2025, the number of customers has drastically decreased.
